MILKING
PROCESS

The milking process is a close interaction with our animals, and is part of our daily routine. We manually milk our goats in a calm and quiet environment with hygienic conditions. We follow strict standards regarding hand washing, udder cleaning and equipment sterilization.

CHEESE
MAKING

Step 1: Thermization

We sanitize the raw milk with low heat.

Step 2: Curding and acidification

We use rennet and re-plant our own Whey.

Step 3: Ladle molding

We mold the curd into draining cup and let it set for 24h.

SHAPING &
SALTING

Step 4: Shaping

We remove the drained cheese from the mold cup and keep the whey for the next acidification or for making ricotta.

Step 5: Salting

Salting helps to prevent unwanted bacteria development.

HERBS &
MAGIC

Organic herbs from our gardens, fresh cracked pepper, our own garlic. This is where the final magic happens – enjoy our goats cheese au naturel or choose your favourite flavours and enjoy our fresh goats cheese on bread, crackers, with salad or fresh fruit.
